Cholesterol is produced primarily in the liver to carry fats around the body. High density lipoprotein (HDL) is the 'good' cholesterol and we need to have higher amounts of this than of low density lipoprotein (LDL), the'bad'cholesterol, to maintain good health. Fish oil, vegetable oils and exercise will increase your level of HDLs. Eating foods high in cholesterol such as butter, cream, cheese, eggs and meat will increase your LDL evel. When it is oxidised in the body, LDL becomes toxic and, if you do not have enough anti-oxidants in your system, LDL becomes even more dangerous, causing a build-up of cholesterol and increasing the risk of heart disease.
Triglycerides also carry fats around the body, but they are only toxic in high doses. A diet high in refined carbohydrates will increase triglycerides. Take fish oil supplements, follow a low-fat diet and exercise regularly to keep triglycerides at an acceptable level.
